Mandarin Oriental is seeking a dedicated and skilled Commis I – Sand & Koal to join the Culinary team at Emirates Palace Mandarin Oriental, Abu Dhabi. This full-time, on-site role is ideal for candidates passionate about delivering world-class cuisine and hospitality. The role involves daily kitchen operations under the direction of the Chef de Partie, with a focus on maintaining hygiene, food safety, and guest satisfaction in a luxury hotel environment.

Key Responsibilities:

  • Ensure all kitchen equipment is ready and safe for use

  • Maintain polite and professional communication with guests and internal teams

  • Adhere to all safety, hygiene, and HACCP protocols

  • Pick up and store food supplies correctly

  • Rotate stock regularly to minimize spoilage

  • Support junior chefs with temperature checks, labeling, food storage, and record-keeping

  • Maintain cleanliness of all workstations, utensils, and equipment

  • Participate actively in hygiene and HACCP programs

  • Respond proactively and courteously to guest needs and anticipate their expectations

  • Uphold exceptional standards of service and culinary excellence

  • Work collaboratively with other departments to enhance the guest experience

  • Take initiative in improving kitchen operations and service delivery

Job Requirements:

  • Prior culinary experience in a luxury hotel is essential; resort experience is a plus

  • Diploma or certification from a Hotel Management School or Culinary Apprenticeship is preferred

  • Basic knowledge of kitchen operations and sanitation standards

  • Strong commitment to hygiene, guest satisfaction, and team collaboration
