About the Role

We are looking for a passionate and knowledgeable Head Sommelier to lead our beverage and wine program and elevate the overall guest dining experience. This role blends deep beverage expertise with engaging hospitality, team leadership, and commercial awareness, perfectly suited to a dynamic pub and bar environment.

You will be responsible for curating the wine list, supporting beer and spirits selection, training the service team, and driving beverage sales while maintaining exceptional service standards.

Key Responsibilities

Guest Experience & Service

• Provide professional, personalized wine and beverage recommendations based on guest preferences

• Guide guests through wine, beer, and spirits selections in a friendly and approachable manner

• Handle beverage-related guest inquiries and concerns with confidence and professionalism

• Oversee wine service standards, including glassware, opening, and decanting

Beverage Program & Curation

• Curate and maintain a balanced wine list suited to a pub and bar concept

• Support selection of craft beers, spirits, and seasonal cocktail offerings

• Analyze sales trends and recommend menu updates and new additions

• Develop beverage promotions, tasting events, pairing nights, and upselling initiatives

Training & Team Development

• Conduct regular training sessions for bar and floor staff on wine, beer, and spirits

• Educate teams on tasting notes, service standards, and food pairings

• Create quick-reference guides and training materials to support daily service

• Assist bartenders and servers with pairing suggestions and product knowledge

Operations & Inventory

• Monitor beverage stock levels and coordinate replenishment with purchasing teams

• Ensure proper storage, rotation, and handling of all beverages

• Maintain accurate inventory records and support monthly stock counts

• Ensure all beverage service complies with hygiene, safety, and licensing regulations

• Support bar operations during peak service periods when required

Requirements

• Wine certification such as WSET, CMS, or equivalent (preferred)

• Proven experience as a Sommelier or beverage specialist in a bar, pub, or restaurant

• Strong knowledge of wine regions, grape varietals, beer styles, and spirits

• Excellent communication, guest engagement, and presentation skills

• Demonstrated ability to train, motivate, and lead service teams

• Strong organizational, planning, and inventory management skills
