Celebrity Cruises is seeking an experienced and skilled Head Butcher to join our dynamic team onboard our luxury cruise ships. This full-time, remote-based role offers the opportunity to work in a multicultural environment while maintaining the highest standards of food preparation and hygiene.

Key Responsibilities:

  • Oversee the daily operations of the Butcher Shop, ensuring smooth production and adherence to company standards.

  • Supervise, coach, and evaluate Butcher Shop personnel in coordination with the Sous Chef.

  • Handle thawing, butchering, and preparation of all meat and poultry for daily menus.

  • Ensure full compliance with United States Public Health (USPH) regulations.

  • Maintain cleanliness and organization in the Butcher Shop and thawing rooms as per the Executive Chef’s schedule.

  • Prepare for scheduled or surprise USPH inspections.

  • Manage proper storage and inventory of meats and poultry.

  • Accurately complete daily recaps and inventory documentation.

  • Enforce company uniform and hygiene policies among staff.

  • Participate in required meetings, trainings, and other work-related activities.

Financial Responsibilities:

  • Ensure cost containment through proper supply handling and accurate records.

  • Analyze operational efficiency and suggest cost-saving measures.

  • Review and forward timesheets for approval.

  • Oversee the proper requisition and storage of supplies to reduce waste and spoilage.

Motivational & Supervisory Responsibilities:

  • Monitor staff performance and assign duties efficiently.

  • Recommend staffing actions, including hires and terminations.

  • Provide on-the-job training and mentorship to enhance team development.

  • Ensure high service quality through regular inspections and feedback.

Qualifications & Education:

  • Minimum of 2 years’ experience as a Head Butcher in an upscale hotel, resort, cruise ship, or banquet service (shipboard experience preferred).

  • Culinary school degree required.

  • Strong leadership, organizational, and communication skills.

  • Ability to work effectively in a fast-paced, multicultural environment.

  • Solid understanding of food safety, sanitation, and inventory control.

  • Proficient in basic accounting principles and computer systems.

  • Excellent interpersonal and customer service skills.
