Kitopi, a leading cloud kitchen and food technology platform, is hiring a Commi Chef – Shawarma Section in Dubai. The role involves preparing, marinating, and cooking shawarma while ensuring consistency, flavor, hygiene, and presentation. The candidate will play a key role in maintaining Kitopi’s quality standards and supporting smooth kitchen operations.

Key Responsibilities

• Prepare, marinate, and cook shawarma meats (chicken, beef, lamb) as per recipes and standards.

• Assemble shawarma wraps, platters, and accompaniments with consistent portioning and presentation.

• Slice shawarma meat using correct techniques to ensure quality and uniformity.

• Operate and monitor shawarma rotisseries/grills, ensuring proper cooking and food safety.

• Prepare sauces, condiments, and sides required for shawarma items.

• Maintain cleanliness, organization, and stock levels at workstations.

• Follow hygiene, sanitation, and food safety protocols at all times.

• Monitor ingredient freshness, reporting shortages or spoilage.

• Support senior chefs with menu development and kitchen operations.

• Assist the culinary team during peak hours to ensure efficient service.

Candidate Requirements

• Previous experience as a Commis Chef or Cook specializing in shawarma or Middle Eastern cuisine preferred.

• Strong knowledge of marinades, grilling, and shawarma preparation techniques.

• Good understanding of portion control and food presentation.

• Familiarity with food safety standards (HACCP certification preferred).

• Ability to work effectively in a high-volume kitchen under pressure.

• Strong teamwork and communication skills.

• Flexibility to work shifts, weekends, and public holidays.
