Role Description:
The Chief Stewarding role involves supervising and managing the stewarding team, ensuring hygiene and operational standards, and maintaining smooth back-of-house operations. The ideal candidate is passionate, motivated, and ready to contribute to Big Mamma’s international expansion in Dubai.

Key Responsibilities:

• Lead, train, and supervise the stewarding team on hygiene, safety, and operational procedures.

• Maintain strict cleanliness and sanitation standards in kitchen areas, dishwashing, equipment, and food storage.

• Monitor and manage inventory of cleaning chemicals, non-food items, plateware, silverware, and equipment.

• Oversee daily back-of-house operations, cleaning schedules, waste removal, and supply availability.

• Collaborate with culinary and GM teams to ensure smooth operations, especially during peak periods.

• Inspect kitchen equipment, work areas, and smallware for safety and operational efficiency.

• Implement loss prevention measures and manage cost control effectively.

Requirements:

• Previous experience in stewarding or kitchen operations management preferred.

• Strong leadership and team management skills.

• Knowledge of hygiene, sanitation, and safety standards in a professional kitchen.

• Ability to organize, multitask, and maintain operational efficiency under pressure.

• Excellent communication and collaboration skills.
